Trout on mixed veggies

A great easy way to prepare a whole fish. Use your oven.

The trout went on a huge bed of veggies. The veggies still had enough texture after cooking and did not get soggy beneath the fish. You can use whatever you have sitting in your veg basket. Most of it will work without any problems.
When you look for a colourful bed of veggies, peppers are a lovely way to get this done.

1 whole trout
2 slices of lemon
1/2 bunch of parsley
olive oil
salt and pepper

veg mix:
2 long sweet peppers
1 green pepperoni
2 spring onions
15 cm white of a leek
2 tbsp edamame beans
salt and pepper
apple cider

Preheat the oven 200 C
Cook for approximately 20 min. It depends of the size of the trout. A smaller one will be done in about 15 minutes.
To check if the fish is done, take some tongs and try to pull out the fin  on the back of the trout. When it comes out easily, the fish is done.
