Saffron Asparagus Courgette Salad

I watched German TV Küchenschlacht last Friday and one of the dishes was a saffron asparagus salad. It looked good and the jury was impressed. Based on a recipe from German chef Alexander Herrmann. It was served on top some marinated lettuce.
I have 250 g aspargus small stalks in the fridge. So, as always my version of a recipe.

In some salted and sugared water with a little knob of butter cook the asparagus al dente, let it cool. Keep some of the cooking water, about a 80 ml.
In the still warm water let the saffron steep. Chop a shallot or two and soften them in some rapeseed oil in a pan for a couple of minutes. Mix them with oil, sugar and juice and zest and season well.



In a high bowl pour in the jogurt and some lemon juice and the fresh herbs with some salt and pepper and blitz it. Use it to dress any kind of salad you have on hand. I used a light green courgette and grated it and mixed it with the dressing- awesome!


marinade it about 30 minutes

recipe:
10 stalks of white asparagus /take green when you don´t get white ones
salt, sugar 1 tsp butter to cook it in
1 or 2  courgettes
2 shallots
2 pinches of saffron
1 lemon zest and some juice
sugar
dill
chervil/or parsley
chives
100 g Greek jogurt
2 tbsp  rapeseed oil
salt and pepper
