Danish cardamom and ginger waffles

I found this recipe a while ago on Pinterest and stored it on my pinboard for further use.
Now coming back from Japan, I was looking for something non fishy and not fried. And since the temperatures here in Germany are now on the autum cold side, I needed a bit of warming food.


Cardamom and ginger are spices that take you into the warm side of life. In many Scandinavian countries these spices are very often used in baked goods.
I bought some underripe pears and combined them with some elderflower cordio and apple juice and cooked them as a compote. That went very well with the waffles.

recipe:
100 g butter
45 g sugar
5 g vanilla sugar
1/4 tsp ground cardamom
1/4 tsp ground ginger
1/4 tsp salt
200 g flour
200 g sour cream
5 eggs

2 tbsp icing sugar
4 tbsp lemon curd
50 ml elderflower cordio
50 ml apple juice
1 lemon
2 pears



Brown the butter to a beurre noisette- do not let it burn! Cool it down and place it into a big bowl.
Add sugar, salt, vanilla and spices and mix well.
Add eggs, one at the time and mix in between.
Sift in the flour and combine well.
Add the sour cream and finish mixing
Let the batter rest for 45 minutes minimum.



Use the butter rest in the pan and add lemon juice, elderflower cordio and apple juice and peel and core the pears and get pieces in. Heat until the pears are soft, cool down.

Butter the waffle iron, you can use what you have. The round one makes about 7 waffles, the square one about 9.
Sprinkle with icing sugar and place some lemon curd on top. Serve with the pear compote.
