Limoncello Cake

What to do with 2 liters of the Italian yellow liquor? I am not a huge fan of cocktails or drinking it pure. I was looking around the web for ideas to prepare something with it.

And I found several versions of a Limoncello cake on Pinterest. I just had to  buy some Vanilla jogurt and was ready to bake.

recipe:
zest of one lemon
2 eggs
3 tbsp Limoncello
1/4 cup sunflower oil
1 cup vanilla jogurt 3,5% fat
2 cups flour
1 cup sugar
15 g vanilla sugar
1/4 tsp salt
1/2  tsp baking soda
1 1/2  tsp baking powder

Ingredients

glaze :
1/2 cup powdered sugar
2 tbsp Limoncello
some edible dried blue flowers and white choc chips on top

Use 2 bowls.
In one bowl mix all the dry ingredients, in the other one all the wet ones.
Pour the dry mix a 3rd at the time into the wet bowl. don`t  overmix.


Preheat oven 175 C. Use a 900 g loaftin or 5 - 6 Mini loaftins greased and lined with baking paper. Bake for 25 min the Mini or for 40 min the loaftin.


When cooled down, mix the glaze and get it on.
