Strawberry Sorbet

I bought a new Ice Cream Maker a couple of days ago. This one is a compressor, a very heavy kind of kitchen gadget.
I needed to see how it worked and bought some Strawberries for my first try.

Delicious Sorbet

I can make different kinds of ice cream in this machine. The one I used until now, just makes cream and custard ice cream and it was meant to plan ahead and stuff the bowl into the freezer 24 hrs before making ice cream. Now it is possible to make Granite, Slush, Sorbet and Dairy ice cream and not wait a day to prepare it.

recipe:
375 g hulled strawberries
1 tsp lemon juice
2 tbsp Grand Manière triple sec
1egg white
3-4 tbsp Agave syrup
100 ml apple juice

Get it into a high bowl and use a stick blender to make a fine liquid. When it is very warm, put the mix into the fridge for an hour, when you have not so warm temp, just chuck it into the ice cream maker and start churning. It needed 35 min to become a smooth Sorbet, put it into the freezer for an hour and you can have a harder one that is great for floating in some champagne.
