Chicken Soup for the Soul

Make yourself something comforting. One of these dishes is a chicken soup. When you are feeling sick or down, this soup will help to restore your good feelings and helps you to heal.


When you have a carcass of some roasted chicken left, maybe the chicken breasts, you have a great meal for the next days.


Use the carcass, scrape all the bits and pieces out of the roasting pan, get in with some fresh, frozen or freeze dried veggies, chuck in some bay leaves and a couple of cloves of garlic, an onion and some peppercorn and you are ready to go. Enough water to cover everything and bring it to a boil. If you like a bit of heat in your soup, use a fresh chili and cook it in the soup too.
It will take an hour until the broth is done, let everything cool down completely, that gives a lot more flavour to the broth, then pour everything through a sieve.

When you prepare the soup, check the salt content, you will need to add some. Cook some pasta in a separate pot, chop the chicken breast into pieces and look for some fresh bits of veggies and bring all together , heat it up until the flavours mingle, add some fresh parsley and you have a second great meal.
