Fried Okras with Beans and Rice

This is a kind of street food I found a couple of years ago in Louisiana.
Okras are not easily found here in Germany, but I got lucky in my Asian supermarket.
Fried in a coating of yellow corn flour and tempura flour and eaten with hot sauce, perfect.


Rice and beans is an other staple diet of the South. It is mostly made with brown or black beans, but I used the beans I had at home- white beans. They give a great flavour to the seasoned rice.

recipe:
400 g Okra
3 tbsp white vinegar
1 tsp salt
1/2 cup yellow coarse corn flour
1/2 cup tempura flour
1 cup ice cold water
salt and pepper
oil for frying

1 1/2 cup rice
salt
100 g precooked beans
Cajun seasoning
In water, vinegar and salt blanch the okras for 2 minutes, get them into a colander and rinse them with cold water.
Cut off the upper part and the tip.
Mix the flours in a bowl and add very cold water and heat up the frying oil.
Coat the Okras with the mix and drop into the oil, fry until golden.
Cook the rice and add Cajun seasoning, 3 min before the rice is done, add the beans to heat through.
Eat with some hot sauce, like Louisiana Hot Sauce!
