This is a very creamy rich veggie bake. Whem it comes out of the oven, just blend all of it roughly together and mix it with any kind of pasta you like.
I went through my veggie drawer in the fridge and put all kinds of stuff out. That all was sitting there for a longer time, but still in great condition.
The next step was to check the cheese shelf of the fridge. The feta was ready to go and so was the cream cheese with horseradish. Together with the veggies a nice base for a pasta sauce.
Ingredients:
100 g tomatoes, 50 g leek, 4 spring onions, 2 garlic cloves, 1 yellow and 1 green bell pepper
150 g feta, 80 g cream cheese horseradish, 2 tbsp olive oil, salt, pepper, Italian herbs, herb butter mix seasoning
200 g spaghetti
Preheat the oven 180 C fan.
Toss cut up veggies and cheeses in, add oil and seasoning and bake for 30 min. Take a stick blender and make a rough chunky sauce. Add pasta and enjoy.
