Pumpkin Spaghetti with Serano Ham and dried Tomatoes

One large Hokkaido Pumpkin is enough for a couple of dishes if you only cook for yourself



Pasta with pieces of pumpkin sounds bland when you think about it, but with the right additional ingredients it becomes a tasty meal.



I bought a couple of very thin slices of Spanish Serano ham. Only about 30 g went into the dish. The flavour is so intense, more would overpower the other ingredients.



Recipe for 2:

175 g spaghetti

250 g pumpkin, 3 tbsp olive oil, herbes de Provence, salt, pepper, chili

30 g Serano ham, 4 sun dried tomatoes im oil, 2 spring onions



Preheat the oven 180 C fan. 

Cut the pumpkin in bite size chunks, season and oil it and bake it for 25 min.



Cook the spaghetti and in a large pan fry o0ff onions with chopped tomstoes. Add a couple og tablespoons pasta water. Drop im the spaghetti, then the Serano and toss. Last finish with the pumpkin
