This is a lovely vegetarian dish. Since I found the Freekeh last week, I am a huge fan of it. It is not necessary to do a lot to it, cook it in a good broth and it is ready to eat.
I found some large wonderful Oyster Mushrooms today. I bought 4 of them and thought that they are really expensive and a good piece of meat would have cost less. I sliced then lengthwise to get a shape of the mushroom.
recipe for 2:
100 g Freekeh
300 ml veg stock
bring the stock to a boil and add the Freekeh. Simmer for 25 minutes and stir it with a fork when it is done.
4 large Oyster Mushrooms
2 spring onions
3 stalks of thyme
2 cloves of garlic
olive oil
salt and pepper
1 tsp creme fraiche
