Migas Tex-Mex Style

It is a breakfast dish in the area where it comes from. But I eat it for dinner, it is to heavy for an early breakfast.


It originally came from Spain and Portugal, the Mexicans made it their own and used the things that were on hand.
Basically corn tortillas from the day before are used up for breakfast. When you eat them as they are, they are stale. When you fry them in oil, they get crispy and soak up the flavour of the ingredients you add as well.
These are things, that are sitting around and go into the pan. At last a couple of eggs get over them and that´s it.


recipe for 2:
2 corn tortillas
1 red onion
1 green chili
3 cocktail tomatoes
2 tbsp grated cheese
60 g sausage or chorizo or kabanossi
2 eggs
2 tbsp fresh coriander
1/2 lime
2 tbsp oil
salt and pepper


In a large pan start with the rough chopped tortillas, then add the onion rings and chili, wait 2 minutes and add tomatoes and  sausage rings. Fry until the tortillas get some colour.


Beat the eggs and pour it over the ingredients. Let it set and season it.
Get some coriander and lime juice on top.
Serve with refried beans and a little salad.
