Orange Cake GF

This is a recipe from Martina Meuth and Moritz and their SWR TV series.





My BFF baked it last weekend and told me that her whole house smelled of oranges. I do not have a house, but my apartment smells like it too!



I started my morning by weighing the oranges to get roughly 300 g. There are untreated organic oranges. But I washed them thoroughly to get any wax of them. Then I put them in small pot and covered them with water and brought them to a boil for 45 min. Let them cool down then.



Now quarter them and get out any piths, I found non. Put the peel and all in a blender and make a paste. Smells great.



Seperate the eggs. Clean the bowl and whisk of your standmixer with lemon juice or vinegar. Put the clean egg whites in and a pinch of salt. Beat until stiff peaks appear. Put in an other bowl for later. 




No need to clean the mixing bowl. Add sugar and egg yolks and beat until creamy and a good volume.



Add cinnamon, ground clove, vanilla paste, baking powder.



Take it off the standmixer and use a spatula now. Fold in the almond flour, the orange paste and 1/3 of the egg white to loosen it up. Carefully fold in the other egg whites.



Butter a 24 cm round loose bottom baking dish, pour in the batter and bake at 170 C fan for 50 to 60 min. I needed just 50 min. Take a wooden skewer to check if the cake is done. 



It can be frozen in pieces easy to enjoy over a period of time.

Ingredients:

2 organic oranges (300 g)

175 g sugar

6 eggs

300 g ground almonds

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp ground clove

1/4 tsp vanilla paste

Pinch of salt
