French Dandelion Salad

Pissenlit Blanc, grown in the North of France.



The area is the vegetable garden of France, fields of artichokes and other prime vegetables like cauliflower come from this region, the Bretagne around Saint-Omer. I stood in the middle of artichoke fields there on my trip along the Bretagne once.



The best way to eat this is a salad. I looked for some additional veggies to add to the Dandelion. A small cucumber and a piece of leek was in my fridges veggie drawer.



Mustard with caraway seeds is very prominant, but together with sour cream, vinegar, oil, agave syrup and seasoning was the dressing.



Some bread slices roasted in a pan with butter, oil and herbes de Provence and a ball of Mozzarella rounded the salad up.
