Black Pudding Crumble with Apples

This is a recipe from the Alsace region of France.

I love Black Pudding!

I found this recipe in a cook book I bought last Saturday in France. 1001 recipes from all regions of France. From French Caribean Islands to the mainland. This is my first attempt to cook something out of it and I am impressed. It tasted amazing.

This is my turn on the recipe.


recipe:
1 large white potato
1 apple
1/2 lemon juiced
1/4 sweet potato (about the same weight)
1 onion
2 spring onions
3 cloves of garlic
50 g butter
250 g Black pudding
2 tbsp breadcrumbs
salt and pepper and nutmeg


Preheat the grill to 180 C
Peel and quarter the potato and peel the sweet potato and cook them and drain them.
Use a small knob of butter and mash the potatoes.
Peel the apple and core it and cut it up into small chunks. In a little butter and the juice cook the apple until it is soft.


Mash it with the potatoes together.
Peel the black pudding and cut it into small chunks.


Peel the onions and garlic and chop it. In some butter start to saute it and add the black pudding until that gets soft too.
Use an oven proof dish and place the onion sausage mix in, top with the potato apple mix.
Sprinkle some breadcrumbs and a little butter on top and bake for 5 - 7 minutes.
