Pizza Iceland Style

I still use the food magazine issue from Iceland. I found so many great ideas to prepare at home.


Today at the European Soccer Championship Iceland is in match againt Hungary and I made a pizza recipe that is a bit unusal but super tasty. I had some leftover frozen dough to use, but make it fresh or use premade dough.

recipe:
use pizza dough
Goatcheese cream cheese
1 red onion
1 tbsp butter
1 tbsp oil
1 tsp brown sugar
1 tbsp dark berry balsamic vinegar
salt and pepper
10 stalks rocket
3 stalks fresh thyme
1 punnet of blackberries

Oven at 200 C

Only a few ingredients for a tasty pizza

Flatten the dough on some baking paper and cover it with cream cheese.
Cut the onion into half rings and in butter and oil saute them until soft, season. Add the brown sugar and let them caramelize a bit, then add the vinegar. Get it off the heat and cool down a little bit.





Place them on top of the cheese and scatter some rocket and fresh pulled thyme leaves over it.
Let the blackberries find their places and put the pizza into the oven at 200 C for 15 minutes.
