Air Fryer Apple Puff Pastry Rings

Puff pastry baked in a Air fryer? Let's give it a try.



These dough covered apple rings looked good, but most recipes called for baking them in the oven for 20 zo 25 min.



Then I found air fryer recipes that cut the time to 15 min. There is one downside to it. I can bake all apple rings in one go in the oven, but due to the size of my basket only 3 at the same time.



It is a bit fiddely to get the puff pastry strips wrapped around the apple slices. Cut the strips not too wide and divide them in the middle.



The result may not look so pretty. But after baking it looks a lot better.



Bevor putting them in the Air fryer, brush them with egg yolk and milk, put some cinnamon on top and sprinkle sliced almonds all over. A light drizzle of agave syrup finishes it.



Bake it at cake setting for 15 min at 180 C.

I ate them with Greek yogurt topped with salted caramel crunch

1 rectangular sheet of butter puff pastry

2 apples

Cinnamon

Sliced almonds

Agave syrup

Topping:

1/2 cup Greek yogurt

Salted Caramel crunch

Cucumber shaked with Caraway Mustard Sauce

The Logan vibe has reached me again. An entire cucumber waited to be eaten.



From one of my latest Nuerburgring trips, I brought back from Monschau a large stone jar of caraway mustard.



Monschau is famous for its mustard mills and they produce so many different flavours. In some tourist shops or at the mustard mill museum you can have taste tests.



I love caraway seeds. The flavoured mustard goes so well with many German dishes and works good in some salad dressings.


Do yourself a favour and use a speed peeler to make long strips instead of slices.

To have a complete lunch I decided to give the cucumber hype a try again. But this time I used imitation crab (Surimi) and some smoked salmon and goat cheese cream cheese. I still have some fresh herbs on my balcony, they were added too.



The seasoning was mostly salt and pepper, because I wanted to let the caraway mustard shine.

Soup with Swabian filled Pasta

It is Maultaschen Time! It is said that the Swabian people invented a kind of filled pasta to trick the Catholic church during Lent and on Fridays when meat was forbidden.



A super center near by offers fresh made Maultaschen. An easy treat for a quick cooked meal. There are many ways to prepare them.



Some veggies in my fridge were ready to go. Starting a vegetable soup was the first step. I have these fine short Angelhair pasta, which I sometimes use for Turkish pilaw, I dumped some of it on the soup.



 Then I looked for some meat and the filled pasta caught my eye




Japanese Pork Curry Rice

I haven't eaten a Japanese Kare Risu in a long time. The cold outside called for comfort food.



I bought some organic pork goulash meat and used double the amount of the pork as vegetables. This gives the dish a very hearty stew like consistency.



The basic process was more or less the same as for any other pork goulash. I only cut the veggies in very large chunks, bigger than the pork.



After one hour of cooking the Japan style of curry showed up. There are special blocks of rue style curry seasoning. That is chopped and melted in the sauce. The flour in it thickens the sauce and gives it the typical Japanese curry flavour. This curry style has not much to do with Indian curry.



Ingredients:

400 g organic pork goulash

Salt and pepper

2 tbsp sunflower oil

1 big onion

2 stalks celery, 1 yellow carrot, 2 orange carrots, 2 parsley roots, 5 small potatoes

1 apple

500 ml beef stock, 250 ml Dashi stock

3 tbsp ketchup, 2 tbsp Worchester sauce, 5 tbsp dark soy sauce

4 blocks Golden Curry roux



Season the pork and brown it in oil in a large pot. Add the rough chopped onion and cook more.



Cut all peeled veggies in large chunks and add them to the pot. Stir well for s couple of minutes.



Add both stock and cook on low heat covered for 50 min. Peel the apple and make smaller cubes. Add them and cook 10 more min.



Chop the Golden Curry roux blocks and use a small strainer to loosen the curry in the sauce. Let it thicken.

Finish with ketchup, worchester sauce and dark soy sauce.

Serve with Japanese short grain rice.

Food at the Hockenheimring Trackday

After exactly one year I came back to the Mercedes-Benz EQ Track-Drive Experience. Last year the 8th of November was Wednesday, today is Friday.



Cold and no sun calls for some hearty food which is included in the day. Arriving 45 min before the program started, was enough time for some coffee and savoury filled pastries.



In between the driving sessions we had coffee and softdrinks to pull us through the events.



Lunch break was nice and buffet style. A salad and soup bar and deer stew with dumplings and Brussel Sprouts (which I hate and don't eat)

A tiny cream dessert was the final part of the lunch.

After an 1 hour stint around the Hockenheimring racetrack in an EQS 53 AMG with 658HP I needed an Espresso to pick me up.

Frozen Gummy Bears

Trying out TikTok trends can be fun, but some of them are weird.



I saw that a couple of times and thought why? Next time in the supermarket a can of Sprite zero crossed my way - Gummy Bears next.



The basic HARIBO were out - I do not know why?! But there are so many different ones. Three different bags went home with me.



I put some in a sealable container and poured the Sprite on top. 24 hours in the fridge and they were nearly doubled in size. I drained the Sprite and put the bears on a plate with baking paper and stuck them in the freezer.



Taste Test:

Hmmm...?  Less sweet, less taste but tasty and BRAIN FREEZE

Do not let them thaw out, they get glibbery.

Prawns and black Rice

I was at the supermarket to get some risotto rice. There were 3 packages which looked a bit oldfashioned. That caught my eye.



A product established 1930 sounds like a solid quality. Rice grown in Italy. They offered Carneroli rice, Aborio rice and Riso Nero.



The Aborio was the first to go in my shopping cart, then I took a closer look at the black one. It is high in fiber.



The back of the package suggested serving the rice with seafood. At the fishmonger I bought prawns. Some squid rings were still in my freezer and just needed to thaw.



A bit of vegetables to add to the rice was a good idea. I thought of green and yellow, but after mixing the cooked rice in with the veggies, the color black took everything over.



I marinated the prawns in garlic and Jamaican spiceblend for some more taste. The squid rings just got some potato starch.



Ingredients:

2/3 rice cooker cup black rice, washed and soaked for 30 min.

3 celery stalks, 1 yellow carrot, 1 green onion, 2 little shallots, 6 garlic cloves

25 ml Noilly Prat

8 black tiger prawns, 5 squid rings

Jamaican spiceblend, salt, pepper

2 tbsp sunflower oil

Cook the rice - it will need a lot longer than white rice.

Marinate the prawns.

Chop veggies in small cubes and saute them in 1 tbsp oil. Season with salt and pepper and let them steam with the Vermouth.

Short before the rice is ready, heat up the pan to high heat again (take the veggies out) and add oil. Cook the prawns on both sides, not more than 4 min in total. Get them out and the squid rings in. They only need 2 min.

Mix rice with veggies and serve with seafood.

Doner Kebap Fitness style

Bake your own pita style low calorie high protein bread first.



Use uber lean turkey deli meat instead of juicy veal or beef. Spray a dash of oil in a pan, put the turkey meat in with lots of seasoning. It wont get a good color.



Add the usual salad parts and bring that together with a slightly garlic flavoured low fat yogurt sauce.



Season with Pul Biber and Sumack and hope for a great taste.



Looks good - tastes as expected. I rarely eat a Döner or Doner Kebap. Maybe 8 a year. But do yourself a favour and eat a real one on a special day.

If you eat them once a week or more, then use this Fitness one to tie you over.

Toppings for 1:

175 g lean deli meat turkey bteast

1  dash spray oil

oriental spiceblend

4  lettuce leaves

2 tomato slices

1 small onion

50 g lowfat yogurt

1 tsp garlic paste

Dried chives, parsley, oregano

Pul Biber, sumack

Flatbreads high Protein low Calories

Some kind of fitness bread to be filled later.



This recipe is one of many you will find on fitness channels. High protein as a lure to bake it. And it has less calories than a normal Piede bread.



One thing that had me worriying was the use of a protein whey powder. There are so many on the market and everybody is trying to suggest that they found the one and only. The problem is: some of them are not available everywhere or bloody expensive.



I had to use an other product, it was ok but what will I do with the other 470 g of it. 



The dough was very cledgy in the beginning, but after some work it came together easily.



The trick is to put it in a cold oven later then heated up to 180 C. Bake it about 15 to 20 minutes. It will get a little bubble when it rises. Eat it fresh.



Ingredients:

130 g spelt flour

140 g low fat curd

30 g protein powder "cream taste", I had vanilla taste

Pinch of salt, pinch of baking powder

22 ml water

1 tsp sesame seeds for topping

The dough makes two flatbreads. Just roll them out, press some indentations in, sprinkle a little water and get some seeds on.

Tropea Onions homegrown with sour cream in Sweet Potato

Yesterday was harvest day of my Tropea onions I have grown on my balcony. 



It was a long way to get there. Last year I was on a holiday in Calabria, Southern Italy, in the area of Tropea. These red sweet onions were sold everywhere. We even visited an onion farmer to see the work that was needed to grow these. I bought some onion condiments and a small bag of seeds.



The description on the package said to plant the seeds in October to harvest the next year in May. I had some empty planters outside, the tomato season was over, I put out some seeds. The planters were "protected" from the winter weather and in early March green shoots came up.



But in April snails came out like the plague. They ate everything in everyones gardens. The splurched on my onions. No survivors!



In the middle of May I decided to put seeds in two small pots. The seedlings later went in 2 larger ones. But only one of these pots was a success. Now I have the first homegrown Tropea onions.

I finely sliced it and mixed it with sour cream and seasoning and put that mix in a baked sweet potato.

The sweet potato was just pricked with a knife, 5 min at 1000 watts in the microwave, brushed with coconut oil and air fryed at 200 C for 20 min.
