Spaghetti all'Assassina

Murderous good spaghetti. The recipe originates from the deep South of Italy. It was cooked first in Bari. Some Chef made a spaghetti dish and his customers said that it was good like an assassination. That moniker stuck. 



Since many pasta dishes in Italy have female names, this dish does as well.

But first things first. You have to have an cast iron pan and a metal spatula. It wont work in a nonstick pan.



Recipe for 2:

250 g spaghetti, 1 fresh peperoni, 3 garlic cloves, 3 tbsp olive oil

150 ml tomato passata, 3 tbsp tomato paste, 600 ml boiling water, salt, pepper, sugar



Cut 2 garlic cloves in 2 parts and chop the 3. Cut up the peperoni and put it in the pan. Heat it up. Fry for 3 min and splash 50 ml passata on top. Be careful, it splatters.



 Boil water and dissolve the tomato paste in it. Season. Add the garlic and chili to a good amount of oil and splash a ladle passata in.

Put the raw spaghetti in the pan. It does not matter if they are a little too long. They will cook down. Use the spatula abd start to turn them and roast them. Pour a little hot tomato water in the pan. Cook them like a risotto and add a little more passata.

Cook and turn until al dente. Let them toast in the pan a little before serving.
