A YT guy from the Rhineland -Giano's Kitchen- is cooking the Italian family classics that he learned from his Mom and Nonna.
This vegetarian dish is simple and does just use one pot. Not so much washing up to do.
The ingredients are simple, break a lot of different kinds of pasta apart for Pasta Mista. Set it aside.
Use half a head of cauliflower and rip the florets off. Peel 2 garlic cloves and use some pepperoncini or other chili to flavour the sauce. A very good gluck of olive oil in a large pot or wok.
Add garlic and chili and give it 2 min. Now put the florets in and coat them well in the oil. Enough water to cover everything. I added just a teaspoon of my homemade vegstock paste.
Bring to a boil, cover and cook for 20 min, then mash the florets and add the175 g of pasta and more water.
Grate Parmesan. If you have a rind, toss that in the pot for more flavour. In Italian families the one who gets the rind is the lucky one.
When the pasta is cooked, add the cheese and finish with parsley.
