Onion Tarte with Sardine, Quail egg and Olives

A nice starter to a Provence dinner on a hot Sunday.


A ready made Pizza dough is the base for two starters. One is savoury, the other is fruity.
A lot of onions and some garlic are topped with a piece of fish, eggs and olives.


Recipe:
Ready made pizza dough
500 g onions
4 cloves of garlic
1 tbsp olive oil
Salt and pepper
1 can sardines
1/2 jar black olives without stones


Use a long rectangular baking dish
Preheat the oven to 220 C
In a medium pan with a little oil sweat the onions until they are soft but not brown.
Add the garlic.
Prebake the dough for 6 min.
Fill it with the onions and bake for 10 more min.
Decorate with Sardines, eggs and olives


There may be a bit of leftover pizza dough
Do not throw it out.

Cut if into 7 cm x 7cm  strips, bake them in the oven. Spread goat cream cheese on top and decorate with a piece of fresh apricot and a frexh ground red Kampot pepper.
