Matcha Pancake with Strawberry Jam

A fluffy pancake with homemade strawberry jam. That is  not a normal pancake
 A heaped teaspoon with Matcha tea powder. This powder was a souvenir from Tokyo Tsukiji outer market.


Matcha pancakes are found everywhere in Japan. Depending on the quality of the tea they are sweeter or more pronounced bitter in taste. These pancakes are often filled with Anko or Azuki bean paste.


I used a standart recipe for a thicker pancake and added Matcha powder.

Recipe for 1:
3 eggs
4 heaped tbsp flour
Pinch of salt
1 Tbsp vanilla sugar
1/2 tsp vanilla extract
1 Tsp baking powder
2 tbsp carbonated water
Milk until you reach a not too liquid batter

Butter for frying
Strawberry jam


Preheat your oven with grill to 180 C.
Mix the batter and let it sit for 10 min.
Use an ovenproof wide pan and heat up the butter.
Pour the batter in and cook it on medium temperature until the bottom is set and you see some bubbles on top.
Stick the pan under the grill and wait about 4 - 5 min.

Transfer on a plate and spread jam on top.
