When you love strong cheeses, a good condiment makes them even better.
I often combine jams and mustard with cheese. This condiment looked interesting to me.
Combining Gouda cubes with yellow or red grapes on sticks is very old school but tasty.
So why not. Make some "sour" grapes.
Recipe:
300 g yellow grapes
300 ml white balsamic vinegar
320 g brown sugar
2 tbsp mustard seeds
3 star anise
4 peppercorns
1 tsp coriander seeds
6 juniper berries
3 jam jars with 200 - 250 ml size
Wash the grapes and leave them on the vines. Pick each one with a needle once and divide them on the three sterilised jars.
In a pot heat up the vinegar with the sugar and the spices. Leg it simmer for 30 min to get a little syrupy consistency.
Pour through a sieve to get the spices out and fill up the jars.
Close the lids.
Store in a dark cool place minimum 2 weeks, better longer.
I ate some of them with Spaghetti Caccio e Pepe yesterday.
