I have no better name for them. They look kind of rustic. They are super tasty.
The Chef´s are still cooking from home during the Pandemic. Lots of tasty dishes. One of them is Nelson Müller, 1 star Michelin Chef from Essen. He is a famous TV Chef and does lots of quality reports for one of our TV channels. His Restaurant is closed like all the others, just doing some out of house delivery service.
He sat up a TV kitchen in his restaurant and at noon during the week is doing some cooking on YT.
The breadcrumbs around the potato wedges turn into a nice color and are giving a good texture.
My meal today was some sauerkraut and cured pork belly.
ingredients:
400 g potatoes
olive oil
Herbes de Provence
smoked paprika
salt and pepper
breadcrumbs
Preheat the oven to 180 C fan.
Peel the potatoes and cut them up into 4 - 6 pieces. Let them sit in some water for 1 hour to release some starch.
Drain and pat dry and put in a bowl. Add the spices and the oil and give them a good toss.
Add the breadcrumbs and toss again.
Bake for 25-30 min.
