This is a SortedFood recipe from the "smart kitchen guide" book. I made some changes, but that is normal for me.
This is my first one pot pasta dish. Usually I cook pasta on its own.
But on a day when I work from home it is a quick meal during the lunch break. I chopped the veggies before I started to work. And brought all ingredients together on the kitchen counter, except the ones that had to stay in the fridge.
Prep time is short and easy. But you will need a scale and a measuring jug.
Recipe for 2:
200 g pasta
200 g chopped tinned tomatoes
250 g fresh tomatoes
1 tbsp tomato paste
1 yellow bell pepper
1 green bell pepper
1 yellow onion
2 cloves of garlic
250 ml milk
100 ml water
1 chicken stock cube
2 tbsp olive oil
Parsley
Bay leaf
Majoram
Oregano
Pepper and salt
200 g cooked chili prawns
Use a big pot.
Heat up the oil and chuck in chopped onion, garlic and bell pepper.
Stir well and place a lid on top of the pot to steam the veggies for 5 min.
Now add tomato paste and stir that in to heat through.
Next all other solid ingredients, the crumbled stock cube and finally the milk and water. Save the prawns for later.
Stir well that all is coated with liquid. Bring to a boil again, close the lid and drop the temperature down to medium.
Check the cooking time if your pasta on the package. After that time, stir well and add the cooked prawns to heat through about 2 min.
Grate some lemon zest of the pot and add fresh parsley.
