Cauliflower with Harissa Yogurt

A light evening meal on a cold day.



This is based on a Chef Alfons Schuhbeck recipe. I made it my own way.



Cauliflower as a side dish is a standart, but the veggie can shine on its own. Not much is needed to make it a decent meal.

I steamed the cauliflower in my Thermomix. I added a beef stock cube to the hot water to make the steam a little tastier. Since it was a small head of cauliflower it needed just 25 minutes.



Just yogurt with Harissa paste is not enough to make this dish shine. 3/4 cup of Panko in butter with added lemon zest for freshness and some dried salad herbs. I added a bit of Ayvar to the yogurt too.



Ingredients:

1 cauliflower head, 1 liter water and a beef stock cube

3 tbsp butter, 1 tbsp rapeseed oil, 3/4 cup Panko breadcrumbs, 1 zested lemon, 1/2 tsp dried salad herbs

150 g Greek yogurt, 1 tsp Harissa paste, 1 tsp Ayvar



Put hot water and stock cube into the steamer. Peel the leaves off the cauliflower and give it a good soak in cold water. Put in the steamer and close the lid. Steam for 25 to 30 min. Test with a knife. In a pan heat uo butter and oil. Toss in the panko and let it get color. Zest the lemon and add the herbs. 

Mix the yogurt dip.
