Chicken Breast with Sriracha Honey Glaze

Hot and sweet chicken breast! What is not to like. Not much work to do. That is great for a midweek meal.



I found the idea on Pinterest and made my own version of it. A good amount of Sriracha  needs a bit of a counter point. I used honey and sweer chili sauce and lemon juice to balance the heat. But it was still very spicy.



A bowl of rice helped.

Chicken breast is a good option for quick meals. Cooking time is short and the breast meat is so versatile. Just take care not to over cook it. Dry chicken breast is bad.



Recipe:

1 whole chicken breast

1 tbsp oil, 1/4 cup Sriracha, 3 tbsp sweet chili sauce, 2 tsp honey, 1 lime, 1 tbsp white vinegar, sesame seeds, 3 cloves of garlic


1 tsp potato starch 1 tbsp water.

1/2 cup Basmati rice

Chop the garlic or grate it. Mix the sauce, just keep the sesame seeds for later.

Season the chicken breast with salt and give it 2 min in a hot pan on both sides. Put it in a baking dish and pour the sauce on top. Cover the dish with tin foil and stick the dish in the oven at 175 C. 



Bake for 20 min, remove the foil and give it 5-10 more min to cook through. Pour the sauce in a pan and bind it with the slurry.

Serve with rice.
