Chicken Skewers or Shish Taouk with Freekeh

Levantine kitchen is still on my radar. This time a kind of street food which is usually cooked on small charcoal grills on the side if the roads. But I am not going outside into the cold, I am using my oven.



The chicken has to stay a couple of hours in a yogurt based marinate. So you have to plan this dish in advance.




Recipe for 3:

750 g chicken breast, 1 cup Greek yogurt

8 cloves of young garlic, 1 tbsp red pepper powder, 1 tbsp grilled Masala or Curry

1 tsp black pepper, 1/2 tsp allspice

1/2 cup lemon juice, salt

Marinate 6- 8 hours. Skewer.



Preheat the oven 150 C. Put the skewers on a rack on top of a baking sheet.

After 25 min check with a thermometer if they reach 75C inner temp. Put under the grill for a couple of min.

Serve with a dip and freekeh. A salad on the side is nice too.
