China Cabbage Nimono with Tuna

Nimono is Japanese and means in some kind of stock cooked vegetables. Nimono is often used for Bento Boxes. Some kind of vegetable as a side in the box. But this dish is actually a very inexpensive kind of full meal. Served over rice it will fill you up on a very low budget. Only a few ingredients and very fast to prepare.



A whole head of China cabbage for one person is a lot to eat. You have to get creative. That was the reason why I gave it a try. I used the tuna water from the cans asmentioned in one recipe I found. Next time I will use some home made stock. The canned water tasted like metal. A bit of dashi stock or even a good veg stock should be a better base to this dish here.



ingredients:

China cabbage more is better, it will wilt down a lot while it cooks

75 ml stock, sancho pepper, shimichi togarashi

60 g canned tuna, 2  - 3 tbsp light soy sauce

1/2 cup short grain rice


Cook the rice while you prepare the veggies.
