Peas and Mint Soup with Feta

This is a recipe from my monthly Garten Flora magazine issue. Not only beautiful gardens are shown in it, but often recipes to one special item grown in season.



I saw this and made my own version of it.

Time for fresh peas is gone, but the frozen ones are as good as the fresh ones and a lot of time is saved, because they are already shelled.



Fresh mint from the balcony and some dried mint tea for a more intense flavour.

The prep time is short and only one pot and a stick blender are needed.



Recipe:

350 g defrosted peas

60 g leek

1 yellow onion

2 green onions

2 garlic cloves

4 stalks fresh mint

1 mint tea bag

1 knob of butter

1 tbsp oil

500 ml veg stock

100 g Feta with herbs

Salt and pepper



Roughly chop leek and onions, keep the garlic whole. Heat up butter and oil and sauté the veggies for 5 min. Add the leaves from 2 mint stalks. Season with salt and pepper.



Add peas, dried mint and hot veg stock. Bring to a boil and cover with a lid. Reduce the heat and cook for 10 min. 

Use a stick blender to make a smooth soup. Place in bowls and add fresh mint leaves and cubed Feta.
