Cheesecake Bakery in Quedlinburg

Up to 193 different Cheesecakes are in the list. Many are seasonal with the fruits. 



They open the cafe at 10 AM, I was there 10:10 AM and 4 different cheesecakes were cut open for me. A long line of people came up behind me.



The more variety there is in front me, choosing makes it very difficult. 



The single pieces are enormous. Each one costs €5,40. In many cafes around here, you pay the same for a piece half the size.

I prepared a plate for my neighbor. She has to help me eat these huge pieces.

Puff Pastry with Ground Meat Filling

Once again a chance to clear stuff out of your fridge.



I had a roll of puff pastry sitting for a while, but still good to go. I bought a small package of ground beef/pork for some soup. But did not cook it. Since I am going away for a couple of days again, I needed an idea to get some food out of the way.



Some mini bell peppers, spring onion and tomatoes went in with the meat. I had a quarter of grated mozzarella to top everything.



I had some of my garlic breadcrumbs leftover. They went on the bottom of the filling.



The ground meat went in the pan first ahead of time. When the color turned to brown, onions, garlic and the chopped bell peppers went in. The seasoning was pretty basic, just salt, pepper and herbes de Provence.



Let the pan cool down completely.



A handfull of fresh herbs went on the filling, then the cheese.

Ingredients:

1 roll puff pastry

250 g ground beef/pork

1 tbsp oil

Salt, pepper, herbes de Provence

4 mini bell peppers

1 spring onion, 1 shallot, 2 garlic cloves

8 cherry tomatoes

Fresh parsley, sorrel, chives

40 g grated mozzarella

30 ml milk

Black sesame seeds

Eating out in Oschersleben

After a 460 km drive to the Motorsport Arena in Oschersleben I was hungry and went downtown for some food.



The pedestrian center had many take-out places, but I wanted something restaurant like. I asked in the tourist information and got the tip to go to restaurant KIZUNA, a Japanese style place.

I had Asian "homemade" noodled fried with duck. 

It was good, but the only Japanese flavour I detected was the two lines of sauce on top of the duck: Yakitori sauce and Kewpie mayo.

The food was more a Vietnamese/Chinese style dish. And the homemade noodles are available in every Asian supermarket.

Green Veggies with Pasta

I needed to get rid of some veggies, this time the green stuff. And some sour cream, the package was opened and a quarter was used up already.



Combining it with bowtie pasta looked like a great lunch to me.



It started with a lot of cutting. Then the veggies go together in a wok to sear a bit.



Seasoned with salt, pepper, pul biber and safflor.



The pasta is cooking in a second pot and some pasta water is added to the wok. 



I still have a slab of Turkish dried mozzarella and sliced some slivers off. They go in the pan next with the sour cream.

The finished bowties get transfered directly from the pot to the wok, the pasta water loosened the sauce and got it creamy.

Ingredients for 1:

80 g bowtie pasta

1 tsp butter, 1 tbsp oil

60 g zucchini/courgette

1 large spring onion, 3 garlic cloves

1 bok choy

40 g mozzarella strips

100 g sour cream

Salt, pepper, pul biber, safflor

Egg and Mayo Omelet

I watched YT emmymade again and she presented an omelet made with mayo.



Eating eggs in the morning is a pleasure for me once or twice  a week. And I love different cooking or preparing methods. 



From very fresh raw egg on hot Japanese short grain rice to 1 min scrambled eggs, boiled eggs, egg salad on toast, poached eggs to fried eggs. I am sure I forgot some other methods here - yeah: tamagoyaki



The method of this omelet looked very simple. Just add a heaped tablespoon of mayo to each egg and use a whisk to blend it very smooth. Do not season it. Just put it in a microwavable container and give it some blasts.  



Depending how soft and wobbley you love your omelet, let it cook a bit less or a bit more. I added some chives for color and placed it on bread.

It is saltier then I thought, not having used salt to start with. I never thought mayo has such high salt content. 

Would I eat it again, probably not.

Zucchini/Courgette Sandwich Keto

I saw that on YT by Emmymade and thought lets give it a try.



Keep in mind that it will be a sandwich you have to eat with fork and knife. Picking it up is not advised.



I used double mozzarella and it kept the slices together. I had some Turkish mozzarella slabs for a dessert in the fridge, which I did not make. Using it sliced up as a base was a good idea. Just one side with cheese does not help, the zucchini slices fall off.



I used a mandoline to get same size zucchini discs. I spread them out on a plate and salted them to rest for 10 minutes. With a paper towel I dried them off.



Use baking paper. It makes it easier to fold or bend the zucchini layer later.



The zucchini went scale shaped on top of the cheese layer. Seasoned with pepper and covered with grated mozzarella.



The oven was preheated at 180 C fan and cooking time was 12 to 15 min. Check after 12 min if the cheese has set in a brown crust around, then its done.



I let it cool for 10 min. Added cooked bacon and large tomato slices and a little Kewpie mayo.

Apple filled Pastry

I had a second roll of croissant dough in the fridge, the same cheaper brand I used with the Pistacchio filled Croissants.



The next time I need this kind of dough, I hope to find the original one. The quality of the cheaper stuff is atrochious.



I wanted to fill it with some thick cooked apple chunks in a thickened sauce. Like apple pie, but it became an openfaced pie more or less.



The apples were cooked in apple juice, lemon juice with zest and added sweetener and cinnamon. A slurry helped to thicken it.



Baking time was 15 min at 180 C fan. A dusting of icing sugar finished it.



Ingredients:

1 roll croissant dough

1 1/2 apples

1 lemon juice and zest

60 ml apple juice+ 2 tbsp with 1 tsp potato starch

Cinnamon, sweetener
