Zucchini/Courgette Sandwich Keto

I saw that on YT by Emmymade and thought lets give it a try.



Keep in mind that it will be a sandwich you have to eat with fork and knife. Picking it up is not advised.



I used double mozzarella and it kept the slices together. I had some Turkish mozzarella slabs for a dessert in the fridge, which I did not make. Using it sliced up as a base was a good idea. Just one side with cheese does not help, the zucchini slices fall off.



I used a mandoline to get same size zucchini discs. I spread them out on a plate and salted them to rest for 10 minutes. With a paper towel I dried them off.



Use baking paper. It makes it easier to fold or bend the zucchini layer later.



The zucchini went scale shaped on top of the cheese layer. Seasoned with pepper and covered with grated mozzarella.



The oven was preheated at 180 C fan and cooking time was 12 to 15 min. Check after 12 min if the cheese has set in a brown crust around, then its done.



I let it cool for 10 min. Added cooked bacon and large tomato slices and a little Kewpie mayo.
