I do not like green bell peppers, especially raw. I had some in a pepper mix and wanted to get rid of them.
A 20 second video showed a Chinese way with egg filled peppers that were steamed. That looked good first, but then the peppers were cut in small round slices and non of the egg fell out? They were placed on a plate on top of each other and then served with hot oil and soy sauce.
I did not trust that method, but the idea of egg filled peppers steamed stayed in my head.
I cut off the tops of the peppers and got the seeds out. Mixed some chicken stock with the eggs and some chives and filled that in the peppers.
Using a metal steamer basket helped me to keep the peppers upright. I sat the basket in my steamer part of my Thermomix and 20 minutes later, the eggs were ready.
Served with homemade garlic chili crisp oil.
Ingredients:
2 green bell peppers
3 tbsp chicken stock
3 eggs
1/2 tbsp chives
Salt and pepper
Garlic Chili Crisp oil
