Tyrolian spiced pasta with venison Bratwurst

Tyrolian spices are found in the famous Schüttelbrot - a hard bread with lots of spices.
We did not use the bread to flavour the pasta, just the mix of spices.
It is so easy and makes a great tasting sauce.


Venison Bratwurst (sausage) goes great with the strong seasoned pasta. Mixed with some sauted mushrooms you get a full meal.

Make the spice blend:
fennel seed
anise seed
fenugreek seed
caraway seed
coriander seed
Use a 1/2 tsp each and a spice grider and make a fine powder.

250 g pasta
salt
4 tbsp butter
150 ml pasta water
150 g button mushrooms
1 spring onion
1 tbsp oil
3 venison Bratwurst
50 g cream cheese
parsley


Clean the mushrooms and chop the spring onion.
In some oil start the Bratwurst, the after 6 min, cut it up into bite size pieces.
In the same pan saute the onion with the mushrooms. Add the sausage pieces.

Drain the pasta and in the big pot melt the butter and fry the spices for 2 min. Add pasta, mix and add the sausage mix.
Melt in the cream cheese and serve with a little parsley
