Pancake with Sausage and Onions - Landjäger

Landjäger is a very special kind of pressed, smoked and dried salami. You can find it here everywhere. It´s origin is in the south west of Germany. The sausage contains pork belly and beef with caraway and other spices and curing salt. They are pressed into boxes and that gives the sausages their special square form.


recipe for 2 - 3:
65 g Gryere or Emmenthaler
2 landjäger sausages 
60 g onions
3 eggs
250 ml whole milk
125 g flour
1/2 tsp salt
1/2 tsp pepper
1 tbsp rapeseed oil and some for the pan


Use a strong blender and grate the cheese first, then fill it into a small bowl.
Next comes the sausages, make a fine crumb and fill in a bigger bowl.
Get the onions in the blender and mix them with the sausage meat.

Crack in the eggs, add milk, flour, salt  and pepper and the bit of oil and mix it to a loose batter.


Let it sit for 10 minutes.
Use a 26 cm pan and add some oil.
Half of the meat mix goes in and gets done for 2 min, add half of the batter. Close the lid and let it cook on low temp. Flip and sprinkle half of the cheese on top, close the lid and let it melt and the pancake finish.
