Sweet Potato Waffles with Avo and Goatcheese


This waffles are so tasty. Get yourself some vegetables in your diet. A great way for kids that hate any kinds of veggies. They wont mind that and will love these waffles.


Sweet potatoes have a good consistency in a batter. The

Recipe for 6 waffles:
400 g cooked sweet potatoes
1 onion
1 Knob of butter
2 Large eggs
100 ml milk
100 g flour
1 Tsp baking powder
1/2 tsp paprika
1/2 tsp cumin
A Pinch of salt
Pepper


Topping:
2 avocados ripe
1/2 juice of lemon
Fleur de Sel
1/2 tsp cumin
Spring onion greens
pink pepper berries


Peel the sweet potatoes and cut the in 1 inch discs. Boil them in salted water for 20 min, drain. Put them on a plate and smash them with a fork. Cool down completely.


Cut the onion in small dices and in a small pan in some butter let them get soft. Cool down.
Bring the dry ingredients together on a mixing bowl, add eggs and milk and stir well. Fold in sweet potato mash and onions. Make a smooth batter.
Cover with clingfilm and let it rest 30 min.

Heat up the waffle iron and brush it with butter. Bake the waffles. They will need a little longer than regular waffles.

Destone the avo, season it with lemon juice, salt and pepper and some spring onion greens.
Make goat cheese quenels.
