On Monday I prepared a Thermomix full of Bolognese.
I had some with spaghetti in the traditional way. I froze some of it for future use and stored some in the fridge to use up in a couple of days like a meal prep.
I took a Tupperware container with leftover soup to the office the next day. It was s bit much. I offered some to a coworker and she loved it. The recipe went to her husband who is in charge of cooking.
Recipe for 3:
Bolognese sauce portion for 2
5 medium potatoes, 1 red bell pepper, 80 g green beans, 2 green onions, 2 cloves of garlic, 2 stalks lovage, 2 tbsp olive oil
500 ml veg stock, salt, pepper, pul biber
Peel and chop onion, garlic and potatoes. Top and tail the beans and cut them into bite size pieces. Clean the pepper.
In a large pot heat up the oil and start with the onions. After 3 min add garlic and potatoes. Another 3 min. Now in with the other veggies and seasoning.
Add veg stock and chopped lovage leaves. Cook unti potatoes are nearly done. Pour in the Bolognese and heat that through for 4 min
Check the seasoning and add more pul biber or chili flakes.
