Matjes Herring Salad

This time of year between May and July is the time to eat pickled matjes herring. They are sold in a special way at many fish mongers.

I remember a trip to Maastrich in the Netherlands, where you could est them from fish stalls everywhere. They were either the two filets hold together by their tail or the matjes was cut up in slices and sold with raw onions on top. Just having a snack when you shopping downtown.

I made Grandma's pink herring salad here a couple of years ago. I still love it.

This is a recipe from German Chef Björn Freitag. I only added some radishes to the salad. It is tasty and not overpowering fishy.

Recipe for 4:

4 double matjes filet, 75 g sour cream, 75 g Greek yogurt

1 apple peeled and chopped bite size, 3 large radishes

2 red onions, 1 tbsp rapeseed oil, salt, pepper, 1 tsp sugar, 50 ml apple juice

Peel the onions and cut them into strips. Heat up the oil in a pan and saute the onions until they get soft. Season with salt and pepper. Add the sugar and let them caramelize a bit. Pour in the apple juice and take the onions off the heat to cool down.

Chop the other ingredients and mix with the onions. Add sour cream and yogurt. Stir well and put in the fridge for 30 min.

Serve with bread or potatoes.
