Feta Turnip and Potato Bake

Sounds boring? No it is not.



Pastinake or turnip is a sweet tasting winter root. It looks like parsley root, but is less hard. It is seldom used. But as a soup or mash vegetable very versatile. I even baked with it.



I wanted something vegetarian that cooked in the oven. The turnips were not enough. I added 2 potatoes and 2 shallots with a little garlic.



All was peeled and cubed and tossed in a bowl.



A good gluck of olive oil and lots of seasoning before the cubes go in the oven surrounding the block of feta.



Bake at 180 C fan for 40 minutes. Stir in fresh parsley and some Perilla oil for Omega 3 fat.



The leftovers went in a pot with some veg stock paste and became a breakfast soup next morning, blended with some hard boiled egg added.
