A very tasty way to have a huge bowl of salad.
The radicchio I bought did no longer have the strong bitterness I was used to. The newer kinds are a lot milder in taste.
That is something I am not so fond of. The bitter note not only intensified the flavour of the salad, it brought good values for your gut. But over the years too many people complained and modern growing methods got rid of it.
I combined the radicchio with a big bunch of flat leaf parsley and a kaki.
The dressing was an Italian "chutney" , cream, oil and some spices. I used mostly salt and pepper, but a bit of Italian seasoning too. A good white balsamic vinegar balanced out the chutney, what was very sweet.
