Broccoli and Cheese Balls

Gretarezepte was the origin of the recipe. But as usual I made my own version.



Whole waiting for the dough for my lucky pigs to double in size, I cleaned my Thermomix and filled it with hot water and set the steamer basket filled with broccoli florets on top. That took 15 minutes to get them soft enough for mushing later. 



After it cooled down I added all other ingredients and pressed them down in the bowl. They needed time to combine and the moisture of the broccoli to soak the other components. 



When you are ready to prepare them, heat up the oven 180 C fan. Use baking paper and pour some olive oil on top. Use an ice cream scoop to get same size balls and press them firmly. Roll through breadcrumbs and place on the baking paper.



Serve with your favorite sauces (Sriracha mayo, jetchup, kaymak)



Bake for 20 minutes, turning them after 10 min.

Ingredients:

250 g steamed or cooked broccoli florets

2 eggs

1 shallot

1 garlic

30 g flour

50 g breadcrumbs and a lot more for the outside breading later

150 g grated cheese ( I used Old Amsterdamer and Edamer)

Pinch of salt

Pepper, smoked paprika, piri piri seasoning, Italian herbs
