Oven roasted Kohlrabi Soup

I am a huge kohlrabi fan. Eating it raw or cooked does not matter, I like all prep methods.



Kohlrabi soup is welcome too. But this is the first time I've put the kohlrabi chunks in the oven first.



The kohlrabi was seasoned with herbes de Provence, salt and pepper and some olive oil.

At 180 C fan 18 to 20 min.



The soup was ptetty basic and I had the chance to use up the mashed potatoes from Xmas day. The soup was smooth with the mash. 



The onions, parsley stalks and garlic took some time in the oil to get soft. Then tge fresh squeezed orange juice and the hot veg stock went in. Seasoned and teady to cook. 

After 5 min I added the mash. 5 more minutes and the soup was ready for the kohlrabi. 

Since everything was cooked, I only stirred in the kohlrabi and took a stickblender to partially mashed some of the kohlrabi. 

I like soups that are a bit chunky. The zest of the orange came on top last.0

Recipe for 2:

1 large Kohlrabi

2 tbsp olive oil

Herbes de Provence

2 small yellow onions

2 green onions

4 garlic cloves

Parsley stalks

100 g potato mash

500 ml veg stock from paste

Juice of 1 Orange

Zest of the orange

Salt, pepper, Piment d'Espelette
