Peanut Butter Chicken on Sweet Potato Mash

For all you peanut butter lovers out there!



A simple marinade for chicken breast with some bell peppers as the veggie part. It is quick in preparation and you can cook it in a pan and a pot or like I did in the Thermomix.
You will just need 15 min to prep the veggies and the chicken and the cooking process is easy.


My recipe this time is for the Thermomix and it is for 4 people:
500 g chicken breast inner fillet
4 spring onions
2 bell peppers
1/2 bunch parsley
1 clove of garlic
10 g honey
70 g peanut butter
20 g lemon juice
50 g rapeseed oil
2 tsp mild paprika powder
1 tsp hot paprika powder
salt and pepper
5 drops Tabasco


Mash:
700 g sweet potatoes in 2 cm cubes
2 cloves of garlic
30 g butter
120  g milk
30 g creme fraiche
1 tsp curry powder
600 g water


Put the parsley into the Thermi and use 3 sec/ power 8 and scrape them down. Add peanut butter, lemon juice, honey, salt, pepper and paprika. 5 sec/ power 5. Pour that into a bowl.
Cut the chicken into bite size pieces  and cut the bell peppers and spring onions.
Mix that together in the peanut sauce and let it marinate.

Get the peeling of the sweet potatoes out of the way and chop them into 2 cm cubes.
Pour 600 ml water into the Thermi and hang the sieve with the potatoes in. Cook for 7 min varoma power 1, then set the steamer on top cook for 18 min varoma power 1. Set the steamer to the side, pull out the sweet potatoes and pour out the water.
Get the garlic in, 5 sec power 8, add butter and push the garlic down. 3 min 100C power 2 cook the garlic.
Add sweet potatoes, milk and sour creme fraiche, pepper and salt and mix on left 8 sec power 5 for a coarse mash.




Serve the peanut chicken on top of the mash.
