Lavash Bread - Iranian Flatbread

To serve with the salad and the main course I optioned for a home baked flat bread. The photo on the website showed a piece of bread that had a air bubble in the middle, not really flat though.


Baking a bread on our Sunday cooking with friends is a part of it.
When I checked the recipe for the Persian herb salad and saw that a main ingredient was fresh bread, I knew I had to look for an authentic recipe.


Recipe for 4 breads:
1 tbsp dry yeast
125 ml tepid water
65 ml olive oil
250 ml milk
2 tbsp sugar
2 tsp salt
560 g flour
1 cup sesame seeds


Let the yeast bloom in the tepid water for 15 min.
Then get all that into a standmixer together with sugar, salt, milk and oil and add the flour gratually.
Knead it for 10 min. Seperate it into 4 balls and cover them and let them sit for 30 min. They should grow double in size.
Use a rolling pin and form long dough strips, about 25 -30 cm
Brush them with a little oil and press in the sesame seeds.

Heat the oven at 250 C.
