A very light kind of dish when you use more pasta water then cream. I was not sure if canned tuna would work with asparagus, but it did. The canned tuna was the high quality kind with huge chunks of tuna. I only used 60% of it.
Leftovers went into scrambled eggs the next morning.
I sauteed the green asparagus with onion and garlic in some olive oil. Added the tuna and a little cream and starchy pasta water.
The sauce gets creamy but not fatty.
Recipe for 1:
120 g fettuccine pasta
150 g high quality canned tuna
200 g green asparagus, 1 spring onion, 1 shallot, 1/4 bunch parsley, 1 tsp garlic paste
1 tbsp olive oil, 50 ml double cream, salt and pepper
Start with the pasta in not too much water. You will need the starch later.
In a pan heat up the oil and toss chopped onions in. After 2 min, add fine sliced asparagus. Give it 4 min
Add the tuna in shredded pieces and season with salt and pepper. Add the cream.
When the pasta is ready, take 100 ml of pasta water and add to the pan and then the drained pasta. Finish with lots of fresh parsley.
