Asparagus Salad with Quail Eggs Korean Style

We have a religious holiday today on Monday, Pentecost. Shops and Supermarkets are closed. 



We are in the high season of asparagus and strawberries, they are sold at huts in different locations. One near by was open today. I bought fresh asparagus and 1 kilo of strawberries. They were made in to jam today.



I used the white asparagus to make a salad. This time with Asian flavours. I still have a couple of marinated quail eggs in a jar. They sit in some nice tasting liquid. I used that with a good amount of Kewpie mayonnaise.

A couple of quail eggs were halved and went in the salad with a fine chopped shallot. I finished the salad with fresh parsley.
