Older apples on my dinner table in a dish were getting pruny and needed some purpose. An older lemon was ready to squeezed too.
Not much work to do when you use some kitchen helpers. I peeled and cored the apples and put them in a mini chopper with some lemon juice.
The eggs had to be separated and the whites beaten to stiff peaks with some salt. That will loosen the batter before it gets in the pan. It makes it fluffy. It is the only rising agent in this batter.
Ingredients for 2:
2 eggs, 4 tbsp flour, 1 tbsp sugar, 1 pinch of salt, 2 tsp vanilla sugar, 1 large apple or 2 smaller, 2 tsp lemon juice, oil for the pan
Powdered sugar, vanilla ice cream
Bake in a wide pan on medium heat for 3 to 4 min on each side. Finish with powdered sugar and serve with ice cream.
