Champignons cru à la moutarde

Raw button mushrooms as a salad?

Most people would say, you can´t eat raw mushrooms. The French can!


This is a French recipe I prepare for many years now - and I am still alive :-)
The cultivated button mushrooms are edible raw, but they need a bit of marinate to make them tasty.
Otherwise they are just a bit bland and tasteless.


recipe:
200 g white button mushrooms
1 lemon
2 tbsp Swedish IKEA mustard - take any mustard you like!
60 ml double cream lightly beaten
1 tsp Agave syrup
1 tsp cider vinegar
salt and pepper
dried salad herbs
50 g lambs lettuce


Clean the mushrooms with a kitchen paper and cut off a bit of the stem. DO not wash them.
Cut them in fine slices and put them in a bowl.
Press the juice of the lemon over it and stir well.
Let it sit 10 min.
Make the dressing by mixing the mustard, double cream, syrup and vinegar with the seasoning.
Pour it over the mushrooms and give it a good stir. Let them sit for 20 min.
Wash the lambs lettuce and place it on the bottom of the plate. It does not need any dressing, because the mushrooms go on top later.
