Ham and Munster Cheese Tart

A whole lot of leftovers went into this tart and made it very delicious. I am cleaning out my fridge before I do my Xmas grocery shopping.


There are always ingredients that go good together. I try to find the ones that are opened packages or tins. Often you need a couple of tablespoons of something and the rest goes back into the fridge. It is not easy to keep track of them and find an other purpose to eat them.


This kind of cooking needs some creativity.
My advice when you read through the recipe, try to exchange what you will find in your fridge, but keep the spirit of the recipe. Exchange the ham for leftover cooked meat or chicken. The sweetcorn for bell peppers, the leek for onions. The strong stinky cheese for a creamy milder kind or even some cream cheese.


Recipe:
1 ready made shortcrust pastry
200 g cooked ham
1 small can if sweetcorn
60 g green of a leek
2 spring onions
1 little fresh chives
200 g Munster cheese
2 eggs
120 g creme fraiche
100 ml milk
Smoked paprika
Salt and pepper
dried salad herbs


Use a loose bottom tart ton and butter it.
Preheat the oven to 180 C fan.
Put the dough in and cover it with baking paper and ceramic baking balls.
Bake for 10 min, then take it out and remove paper and balls.


Cut the leek in fine strips, wash it and microwave it for 3 min.
Chop ham and onions and chives.
Get the drained sweetcorn in first, then leek and ham. Now onions and chives.
Add a ring of cheese slices.


Mix creme fraiche with milk, eggs and seasoning and pour over.

Bake for 30 min.
