Green Beans Pesto Pasta
Fast and tasty! A 15 minutes meal.
Do you want something very satisfying without a lot of hassle. Buy a good organic red pesto and some small green beens. Check your cupboards for papardelle with egg and you are good to go. Tagliatelle will work fine too. You´will need the egg pasta for this dish.
It is something that can be found in the northern part of Italy. Pasta with egg in the dough is the best kind you can get in the Emilia Romagna. Great to go with Ragu or other meat sauces. But also easy the best kind of pasta to go with Pesto.
Do not over cook the beans. They need to keep their snap. I use the one pot method. My papardelle needed about 9 minutes to cook. After 5 minutes I have chucked the beans into the same pot. They were al dente together with the pasta.
A dash of chives oil was still in the fridge. About 1 tbsp went in first. I got a small jar of red pesto made from a local organic source for my birthday. Just two heaped teaspoons helped to get the dish together. DO NOT drench it in sauce!
Some fine grated Pecorino cheese and some fresh basil leaves finished it.

Papardelle pasta or German Bandnudeln with egg
green Kenia beans
red organic pesto
chives oil
Pecorino cheese
basil
