Frittata with Veggies and Cheese

There are so many ways to make a frittata. The internet is full of recipes.  A while ago I made one with Burrata. You can find it here too. This time I used a German butter cheese. A hard cheese but one that melts pretty easy and makes a good cheese pull.



I prepared it in a pan on the stove, but finished it under the grill in the oven. Just for the last 5 minutes. Take your time to saute the veggies in the pan on medium high heat. Season them well, otherwise they are bland in the eggs later. Now us the time to add the chopped cheese. Just stir it in.



When the egg mix is in the pan, reduce the heat to medium low and put a lid on the pan. After 6 min check the bottom. When it is firm and the top id wobbly place the pan under the grill.



You can eat it hot, at room temp or cold. Store it in a Tupperware up to 5 days.




Ingredients:

4 eggs, 50 ml whole milk, smoked salt, pepper, 1 red bell pepper, 60 g Napa cabbage, 3 spring onions, 2 stalks celery, 2 tbsp olive oil, dried thyme, chili flakes, 60 g hard butter cheese
