A simple but moist cake that stays this way a couple of days. This can be found in many local bakeries on the island.
Almonds are grown on Mallorca. That is the reason the cake is traditional there. The recipe is simple.
It is usually served with lots of icing sugar on top. But I am not a huge fan of a lot of mess on my shirts.
Ingredients for a 26 cm round baking dish:
6 eggs separated, 200 g icing sugar, pinch of salt
1 vanilla bean pod seeds, zest of a lemon
1 tsp cinnamon, 200 g ground peeled almonds, butter for the dish
Heat the oven to 165 C.
Beat egg yolks with sugar creamy. Add vanilla seeds, zest and cinnamon. Now the almonds.
Beat egg whites with salt to stiff peaks. Use a third to loosen the dough and fold the rest in. Butter the dish very well and fill in the batter.
Bake 40 to 50 min.
When the cake is cold dust it with icing sugar if you like.
